Bodbod Pilit

6 cups malagkit
6 cups coconut milk
31/2 tsps. Salt
1/3 cup sugar
2 tbsps. Ginger juice
Banana leaves, wilted
Water

Wash malagkit twice; cover with water and soak for an hour. Drain. Combine coconut milk, salt, sugar and ginger juice in a carajay. Bring to a boil, then add malagkit. Cook the mixture with constant stirring until almost dry. Cool. Prepare banana leaves by cutting them into 8x10 inch sheets. On each sheet place 2 tbsps of the mixture and form into “bodbod”. Fold ends and tie securely with strips of banana leaf. Arrange pieces in a big kettle, lined with banana leaf. Add water just barely enough to cover the surface. Cover kettle tightly and cook for an hour or until done. Makes 2 dozen bodbod.

Biko

5 cups malagkit
5 cups water
4 cups thick coconut milk (don’t shake the can. Once you opened the can drain the watery thing and just use the creamy part)
3 cups brown sugar
½ tsp salt
1 small piece ginger, crushed. Discard ginger before serving.

Wash malagkit and put in a pot. Add water and boil until done. In a carajay, combine the remaining ingredients; mix well, and boil until thick. Lower heat and add the cooked malagkit. Blend well, and continue cooking, with constant stirring, until very thick and heavy to handle.
